Easy Peasy Weekly Recipe #6

It's Wednesday!


Time for this week's installment of Christie's Easy Peasy Weekly Recipes!


This one I am stealing from my Dad and his wife Corey. They make these for our family when they come down to Florida from Connecticut for their annual visit. It is super easy and if you make it with lower fat options, much healthier too.

Graham Cracker Ice Cream Sandwiches


Ingredients:
  • Graham Crackers (we really like the chocolate ones...they do have the no-fat or low-fat ones)
  • An ice cream or frozen yogurt of choice. (Frozen Yogurt will cut down on the fat intake as well)


Instructions:

First off take the ice cream out of the freezer and let it sit for just a few minutes on the counter. You will need a very sharp knife to cut the ice cream out of the carton and then cut the ice cream into 1 inch thick squares the size of the graham crackers. Sandwich the ice cream between two graham crackers. Wrap with plastic wrap and place in the freezer to harden the ice cream again before serving and...Wah-lah! Your done!


You can use chocolate chips, sprinkles or even small berries to put on the sides. I have thought of using Nutella to spread on each of the insides of the graham crackers...but haven't tried it as of yet. Sounds yummy in my head though...lol
