Time for this week's installment of Christie's
Easy Peasy Weekly Recipes!
Ingredients:
Whole Chicken Fryers
Veggies: Sweet Onions, Frozen Baby Carrots (so they don't get too mushy, Potatoes and 1 inch chopped Celery
Chicken Seasoning of Choice (we used Monterey Chicken on one and the other just a generic chicken seasoning)
Olive Oil
Salt and Pepper to taste

Preheat oven at 375 degrees. Quarter the 2 onions and place at the bottom of the pan.

Place the chicken on top of the onions, sprinkle the chicken with seasoning of choice and load up all your veggies. Drizzle all the contents with the olive oil.

Cover the chicken with the foil and place in the oven for 1 1/2 hours. Uncover chicken then continue cooking for 30 more minutes. When done remove from oven and keep covered for 15-20 minutes. Then serve!

Chicken should register at 180 degrees with a meat thermometer in the thighs to be done. I made this for my family Monday night and my kids were in love. Jason even said he could eat it every single day of his life...I will call that a win for Mommy!

Love it! I'm all for One Dish Meals! Wrap 'em up, throw it in the oven and forget about it - well for an hour or so anyway. Thanks for sharing your recipe.
